Ingredients:

FOR THE DOUGH:

  • All-purpose flour: 2 cups
  • Dry yeast: 1 tsp
  • Sugar: 1 tsp
  • Warm water: 3/4 cup (about 110°F/43°C)
  • Salt: 1/2 tsp
  • Olive oil: 1 tbsp
  • Milk: 1/4 cup

FOR THE TOPPINGS:

  • Corn kernels: 1/2 cup
  • Bacon bits: 1/4 cup (optional)
  • Shredded mozzarella cheese: 1 cup
  • Cooked chicken: 1/2 cup, shredded (optional)
  • Onion: 1 small, thinly sliced
  • Herbs (e.g., parsley or oregano): for garnish

Instructions:

  1. Prepare the Dough:
    • In a small bowl, combine warm water and sugar, then sprinkle dry yeast over the water. Let it sit for about 5 minutes, or until the mixture becomes frothy.
    • In a large bowl, combine flourand salt. Add the yeast mixture, olive oil, and milk. Mix until the dough begins to form.
    • Knead the dough on a floured surface for 8-10 minutes until it becomes smooth and elastic.
    • Place the dough in a lightly oiled bowl, cover with a clean cloth, and let it rise in a warm place for about 1 hour, or until it doubles in size.
  2. Shape the Breads:
    • Preheat your oven to 375°F (190°C).
    • Punch down the dough and divide it into small portions (about 6-8 pieces).
    • Shape each portion into a small round or oval shape and place them on a baking tray lined with parchment paper.
  3. Add the Toppings:
    • For each mini bread, add a generous portion of your desired toppings:
      • For the corn and bacon topping: Sprinkle some shredded mozzarella cheese, then top with corn kernels and bacon bits.
      • For the chicken and onion topping: Spread cheese, then add shredded cooked chicken and thinly sliced onions.
    • Optionally, sprinkle some herbs like parsley or oregano on top for extra flavor.
  4. Bake:
    • Place the tray in the preheated oven and bake for 12-15 minutes, or until the edges are golden brown and the cheese is melted and bubbly.
  5. Garnish and Serve:
    • Once the mini breads are done, remove them from the oven and let them cool slightly.
    • Garnish with fresh herbs, if desired, and serve warm.
