Sugar-Free Strawberry Ice Cream Cups

Ingredients

 

2 cups fresh strawberries, chopped

1 cup heavy whipping cream

1 cup unsweetened Greek yogurt or cream cheese

3–4 tbsp powdered erythritol or monk fruit sweetener

1 tsp vanilla extract

A few strawberry pieces for topping

Instructions

Wash and chop the strawberries.

Blend strawberries with sweetener and vanilla until smooth.

In a bowl, whip the heavy cream until fluffy.

Fold in the yogurt or softened cream cheese.

Add the strawberry mixture and stir gently.

Pour into cups or a freezer-safe container.

Freeze for 3–4 hours until creamy and firm.

Top with fresh strawberry pieces before serving.

Coconut flakes

Sugar-free chocolate chips

A squeeze of lemon juice for extra freshness

Tips

For extra creaminess, stir once halfway through freezing.

Use frozen strawberries for a thicker texture.

Keep covered in the freezer for up to 1 week.
