MARINATED CUCUMBERS, ONIONS, AND TOMATOES

2 small red onions

3 limes, juiced

1 tbsp oil (olive or light avocado oil)

3 tomatoes

1 tbsp finely chopped cilantro

Salt, to taste

Preparation:

 

 

Slice the red onions in half, then finely mince them. Place them in a bowl.

Sprinkle the onions with 1 tablespoon of salt and let them sit for 10 minutes.

Cover the onions with warm water and let soak for another 10 minutes.

Rinse the onions thoroughly and squeeze out excess water.

Add the lime juice and a pinch of salt to the onions. Allow them to sit until they turn pink or for at least 30 minutes before serving.

Slice the tomatoes in half and finely mince them.

Toss the onions with the tomatoes, oil, and cilantro.

Taste and adjust salt as needed.
