INGREDIENTS:

  • 8 bone-in, skin-on chicken thighs
  • 1 head of garlic, halved horizontally
  • 6–8 garlic cloves, peeled
  • 3–4 sprigs fresh rosemary (or thyme)
  • 3 tbsp olive oil
  • 1 tsp salt
  • Β½ tsp black pepper
  • 1 tsp paprika (optional, for color)
  • Juice of Β½ lemon

INSTRUCTIONS:

  1. Preheat Oven
    • Set oven to 400Β°F (200Β°C).
  2. Prepare the Chicken
    • Pat chicken thighs dry with paper towels (this helps the skin crisp up).
    • Place them in a roasting pan or baking dish.
  3. Season
