easy Crockpot Cowboy

Ingredients:1 pound ground beef or sausage1 medium onion, diced4 medium potatoes, peeled and cubed1 can (15 oz) kidney beans, drained and rinsed1 can (15 oz) diced tomatoes, undrained1 can (15 oz) corn, drained1 cup shredded cheddar cheese1 ½ cups beef broth2 teaspoons garlic powder2 teaspoons smoked paprika1 teaspoon chili powder (optional for spice)Salt and pepper to tasteInstructions:Prepare the Ground Beef:In a skillet, cook the ground beef and diced onion over medium heat until browned. Drain excess fat.Layer in the Crockpot:In the Crockpot, layer the cubed potatoes, followed by the cooked ground beef and onions.Add the kidney beans, diced tomatoes, and corn.Season and Add Broth:Sprinkle garlic powder, smoked paprika, chili powder, salt, and pepper over the layers.Pour the beef broth evenly over the top.Cook:Cover and cook on low for 6-8 hours or high for 3-4 hours, until the potatoes are tender.Add Cheese:About 20 minutes before serving, sprinkle the shredded cheddar cheese on top and cover until melted.Serve:Scoop into bowls and serve hot. Great with cornbread or crusty bread on the side!Enjoy!
