– 2 medium zucchinis, sliced into 1/4-inch thick rounds

– 1/2 teaspoon onion powder
– Salt and pepper, to taste
– 1 egg, beaten (for egg wash)
– Olive oil, for frying
Instructions:
1. Preheat oven to 400°F (200°C).
2. In a shallow dish, mix together Parmesan cheese, breadcrumbs, oats, oregano, garlic powder, onion powder, salt, and pepper.
3. In a separate dish, beat the egg.
4. Dip each zucchini round into the egg wash, then coat in the breadcrumb mixture, pressing gently to adhere.
5. Place coated zucchini rounds on a baking sheet lined with parchment paper.
6. Drizzle with olive oil and toss to coat.
7. Bake for 20-25 minutes, flipping halfway through, until crispy and golden brown.
