Perfect for busy weeknights or a special dinner, Chicken Piccata is a go-to recipe for any occasion.
Ingredients:
- 4 boneless, skinless chicken breasts
- 1/2 cup all-purpose flour (for dredging)
- Salt and pepper to taste
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter
- 1/2 cup chicken broth
- 1/4 cup fresh lemon juice (about 2 lemons)
- 2 tablespoons capers, drained
- 2 tablespoons fresh parsley, chopped (for garnish)
- 1 tablespoon lemon zest (optional)
Instructions:
- Prepare the Chicken: Season both sides of the chicken breasts with salt and pepper. Dredge each piece in flour, shaking off any excess.
- Cook the Chicken: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the chicken breasts and cook for 3-4 minutes on each side, until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- Make the Sauce: In the same skillet, melt 2 tablespoons of butter over medium heat. Add the chicken broth, lemon juice, and capers. Stir to combine, scraping up any browned bits from the bottom of the skillet.
- Simmer the Sauce: Bring the sauce to a simmer and cook for 2-3 minutes, allowing the flavors to meld.
- Finish the Dish: Return the chicken breasts to the skillet and coat them with the sauce. Let them simmer in the sauce for 2-3 minutes to reheat.
- Serve: Remove from heat and stir in the remaining 2 tablespoons of butter for richness. Garnish with fresh parsley and lemon zest (optional). Serve hot with the sauce drizzled over the chicken.
