Chicken Piccata

Chicken Piccata is a classic Italian dish that’s both vibrant and easy to make. With its tender chicken breasts, tangy lemon, briny capers, and a silky butter sauce, this dish brings together simple ingredients for an explosion of flavor. Perfect for busy weeknights or a special dinner, Chicken Piccata is a go-to recipe for any occasion.


Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour (for dredging)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 2 tablespoons capers, drained
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • 1 tablespoon lemon zest (optional)

Instructions:

  1. Prepare the Chicken: Season both sides of the chicken breasts with salt and pepper. Dredge each piece in flour, shaking off any excess.
  2. Cook the Chicken: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the chicken breasts and cook for 3-4 minutes on each side, until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. Make the Sauce: In the same skillet, melt 2 tablespoons of butter over medium heat. Add the chicken broth, lemon juice, and capers. Stir to combine, scraping up any browned bits from the bottom of the skillet.
  4. Simmer the Sauce: Bring the sauce to a simmer and cook for 2-3 minutes, allowing the flavors to meld.
  5. Finish the Dish: Return the chicken breasts to the skillet and coat them with the sauce. Let them simmer in the sauce for 2-3 minutes to reheat.
  6. Serve: Remove from heat and stir in the remaining 2 tablespoons of butter for richness. Garnish with fresh parsley and lemon zest (optional). Serve hot with the sauce drizzled over the chicken.
