Ingredients:
4 boneless, skinless chicken breasts
2 tablespoons olive oil
3 cloves garlic, minced
1 shallot, finely chopped
1 package (5.2 oz) Boursin cheese with garlic and fine herbs
½ cup chicken broth
½ cup heavy cream
Salt and black pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions:
- Cook the chicken: Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper, then sear for 4–5 minutes per side, until golden and cooked through. Remove from the skillet and set aside.
- Make the sauce: In the same skillet, add garlic and shallot. Sauté for 1–2 minutes until fragrant.
- Add creaminess: Pour in chicken broth and heavy cream. Stir well, scraping up any bits from the pan. Add the Boursin cheese and whisk until melted into a smooth, creamy sauce.
- Combine: Return chicken to the skillet, spoon sauce over the top, and let simmer for 2–3 minutes to absorb the flavor.
- Serve: Garnish with fresh parsley and serve hot with mashed potatoes, rice, or pasta.
