City Chicken Made Easy

Ingredients

• 1lb (450 g) pork cubes or a pork-veal mix

Salt and pepper

  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 cup breadcrumbs
  • 2 eggs, beaten
  • 1/2 cup flour
  • Wooden skewers (4-6
    inches long)
  • Oil for frying
  • Optional: chicken broth for baking step

Instructions

1. Prepare the Skewers

  1. Season meat cubes with
    salt, pepper, garlic powder, and paprika.
  2. Thread 3-4 pieces of meat onto each wooden skewer to make “mock drumsticks.”

2. Bread the Skewers

  1. Place flour in one bowl, beaten eggs in another, and breadcrumbs in a third.
  2. Coat each skewer in flour.
  3. Dip into beaten eggs.
  4. Roll in breadcrumbs until fully coated.

3. Fry Until Golden

  1. Heat oil in a skillet over medium heat.
  2. Fry each skewer until golden brown on all sides (about 3-4 minutes per side).
  3. Place on a wire rack to drain excess oil.

4. Optional Baking Step (Traditional Method)

To make them extra tender:

  1. Preheat oven to 175°C (350°F).
  2. Place browned skewers in a baking dish.
  3. Add 1/2 cup chicken broth to the bottom of the dish (not over the skewers).
    1. Cover with foil and bake for
      30-40 minutes.

    5. Serve

    Serve warm with:

    • Mashed potatoes
    • Gravy
    • Green beans
    • Salad
