Crockpot Lasagna Soup

Ingredients:

1 lb ground beef

1 small onion, diced

3 cloves garlic, minced

1 can (28 oz) crushed tomatoes

1 can (14.5 oz) diced tomatoes

4 cups beef broth

2 tsp Italian seasoning

1 tsp salt

½ tsp black pepper

8–10 lasagna noodles, broken into pieces

1 cup shredded mozzarella

½ cup parmesan

1 cup ricotta (for topping)

Fresh basil (optional)

Instructions:

Brown ground beef with onion and garlic; drain.

Add beef, crushed tomatoes, diced tomatoes, broth, Italian seasoning, salt, and pepper to the crockpot.

Cook on LOW 6 hours or HIGH 3–4 hours.

Add broken lasagna noodles; cook 20–30 minutes until soft.

Stir in mozzarella and parmesan.

Serve with a dollop of ricotta and fresh basil.
