Ingredients
For the Potatoes:
2 pounds of russet potatoes, scrubbed and cut into wedges
2 tablespoons of olive oil
Salt and pepper to taste
For the Mojo Sauce:
1/4 cup of fresh orange juice
1/4 cup of fresh lime juice
4 cloves of garlic, minced
2 tablespoons of fresh cilantro, chopped
1 teaspoon of ground cumin
1 teaspoon of dried oregano
1/2 teaspoon of paprika
1/4 teaspoon of red pepper flakes (optional)
Salt and pepper to taste
Préparations
1 . Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
2 . Prepare the Potatoes: Place the potato wedges in a large bowl and drizzle with olive oil. Season with salt and pepper, tossing until the potatoes are evenly coated.
3 . Bake the Potatoes: Arrange the seasoned potato wedges in a single layer on the prepared baking sheet. Bake in the preheated oven for 25-30 minutes, flipping halfway through, until the potatoes are golden and crispy.
4 . Make the Mojo Sauce: While the potatoes are baking, prepare the Mojo sauce. In a small bowl, whisk together the orange juice, lime juice, minced garlic, chopped cilantro, ground cumin, dried oregano, paprika, red pepper flakes (if using), salt, and pepper.
5 . Toss with Mojo Sauce:
Once the potatoes are done baking, transfer them to a large bowl. Pour the Mojo sauce over the hot potatoes and toss until they are evenly coated with the flavorful sauce.
6 . Serve and Enjoy: Transfer the Mojo Potatoes to a serving platter and garnish with additional chopped cilantro, if desired. Serve hot and enjoy the explosion of flavors with every bite!
