For the Mushroom Toast:
1 slice whole-grain bread
1 cup mushrooms, sliced
1 tbsp olive oil or butter
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
1 tsp fresh parsley, chopped
For the Sides:
2 eggs, soft-boiled
1/2 avocado
1 small tomato, sliced
1 cup fresh spinach
1/2 tsp olive oil

🍽️ Step by Step:
1️⃣ Prepare the Mushrooms:
Heat olive oil in a pan over medium heat.
Add sliced mushrooms, garlic powder, salt, and black pepper.
Sauté for 5-7 minutes until golden brown.
2️⃣ Soft-Boil the Eggs:
Bring a pot of water to a boil.
Add eggs and cook for 6-7 minutes.
Transfer to an ice bath, then peel and slice in half.
3️⃣ Sauté the Spinach:
