Ingredients:
1 cup couscous
1 cup boiling water
1 tablespoon olive oil
7 oz halloumi cheese, sliced
1/3 cup dried cranberries
1/4 cup chopped fresh mint
1/4 cup chopped cucumber
1/4 cup chopped scallions
Mint-Lemon Dressing:
2 tablespoons olive oil
1 tablespoon fresh lemon juice
1 teaspoon lemon zest
1 tablespoon finely chopped mint
Salt and pepper, to taste
Directions:
Place couscous in a heatproof bowl, pour over boiling water, cover, and let sit for 5 minutes. Fluff with a fork.
Meanwhile, heat olive oil in a skillet over medium heat and grill halloumi slices for 2–3 minutes per side until golden and crisp.
In a small bowl, whisk together all dressing ingredients.
In a large bowl, combine couscous, cranberries, mint, cucumber, and scallions. Add grilled halloumi.
Drizzle with the mint-lemon dressing and toss gently. Serve warm or chilled.
